My Favorite Lemon Cookies

  • lemoncookies1/2 cup butter (1 stick)
  • 1 cups sugar
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1 egg
  • 1 1/4 cups flour
  • Zest of one lemon
  • 1 Tsp lemon extract
  • Powdered sugar for dusting

Preheat oven to 350°F.
Soften butter with sugar, baking powder, lemon zest, lemon extract and salt. Blend in egg and flour.

Refrigerate wrapped dough for 2 hours.

Roll out dough on wax paper or floured board and cut cookies  with a glass then cut in half with a knife.

Bake at 350°F on greased or parchment paper lined cookie sheet for 9 to 10 minutes, or until  barely golden brown along the edges. Allow to cool 5 minutes. then move to cool on wire racks. Dust with powdered sugar when cool.
