Whole Wheat Buttermilk Waffles

2 eggs
2 cups buttermilk*
2 cups whole wheat flour
1 tsp baking soda
1 tsp baking powder (rounded)
1/2 tsp salt
6 Tbsp canola oil

*Buttermilk Alternative: Place 2 TBSP white vinegar in a 2C measuring cup and top with enough low fat milk to reach the 2 cup line.
Set aside and combine the dry ingredients.

Mix together flour, baking soda, baking powder and salt.

In a separate bowl beat eggs well, then add buttermilk and oil to eggs and beat.

Stir into flour mixture and mix until almost smooth.

Use a hot waffle iron.  Makes about 12 waffles or 6 Belgian Waffles, depending on the size of your waffle iron.

These waffles are light and fluffy. Make a stack and freeze them individually for quick breakfasts throughout the week!
